  1. Prepare rice according to package instructions. When the rice is done, add the coconut milk, sugar and vanilla, mix gently with a rubber spatula. Allow to cool completely.
  2. Place an 11 x 10 inch rectangle of plastic wrap on a flat surface. Next, spread 1 cup of rice in the center of plastic wrap (forms a 9 x 8 inch rectangle), pressing down with your fingertips until you get a thin, even coating. (If the rice is too sticky, dip your finger in a bowl beforehand.)
  3. Next, place the fruit pieces on top of the rice in a straight line from one short side. Then, using the plastic wrap as a guide, roll the filling as tightly as possible into a roll, finishing off by wrapping the roll in plastic. Repeat with the remaining fruits and rice.
  4. When all the rolls are ready, remove the plastic wrap, cut each into 1 1/2 inch slices and finally fill it with sesame and lime zest.
  5. If you want, you can prepare your sushi with other shapes, for example, forming balls, triangles or squares by molding 2 tablespoons of rice. After getting the shape you want, fill it with fruit and add sesame seeds and lime wedges on top.
