Explanation
- Prepare rice according to package instructions. When the rice is done, add the coconut milk, sugar and vanilla, mix gently with a rubber spatula. Allow to cool completely.
- Place an 11 x 10 inch rectangle of plastic wrap on a flat surface. Next, spread 1 cup of rice in the center of plastic wrap (forms a 9 x 8 inch rectangle), pressing down with your fingertips until you get a thin, even coating. (If the rice is too sticky, dip your finger in a bowl beforehand.)
- Next, place the fruit pieces on top of the rice in a straight line from one short side. Then, using the plastic wrap as a guide, roll the filling as tightly as possible into a roll, finishing off by wrapping the roll in plastic. Repeat with the remaining fruits and rice.
- When all the rolls are ready, remove the plastic wrap, cut each into 1 1/2 inch slices and finally fill it with sesame and lime zest.
