Norma Duvall has been our most universal star. Winning the Miss Madrid trophy in 1973 was the start of a career that would become international in show business. She started in theater and later moved to musical revue, replacing Barbara Rey at the Lido Theater in Madrid. Years later, he was already winning as a vett at the Folies Bergère in Paris.

During his amazing 66 years, he participated in the 7th edition of Master Chef Celebrity last year. Despite this, the former vedette admits that she is not a cook at home, although everyone in her family has been: her mother, grandmother, sister and even her three children.

When asked in a recent interview which dish would stand out from her family cookbook, she recalled a dish that her mother made at home and that she “inherited” from her grandmother’s tradition: cod with roasted peppers and tomatoes..

This recipe is nothing short of a classic cod a la riojana, which is prepared with pre-roasted bell peppers. At Norma’s house (for the Puri family) they made it with just four ingredients (ground cod, onions, natural tomatoes and red peppers), but we’re going to give you a slightly enriched recipe from Cocina Fácil.

How to cook cod with roasted peppers and tomatoes

Cod with roasted peppers and tomatoes

For 4 persons

Ingredients

4 minced cod fillets
3 red bell peppers
5 cloves of garlic
1 onion
1 tomato
1 cup of vegetable broth
4 tablespoons of olive oil
parsley
black pepper and salt

Step by step

  1. grate the tomatoes

    Peel the onion and one clove of garlic and chop. Grate the tomato.

  2. Bake the pepper

    Fry the pepper in an oven heated to 200° for 50 minutes. After the specified time, wrap them in plastic wrap and let them warm up. Then clean them, remove the seeds and cut them into strips.

  3. Fry the cod

    Dust the cod with flour and fry for 1 minute on each side in a pan with oil. Grab it and book it!

  4. cook the stir-fry

    In the same oil in which you browned the cod, fry the onion with all the garlic for 5 minutes on low heat. Then add the minced garlic, grated tomatoes and pepper strips and cook for another 5 minutes.

  5. cook everything together

    Add the cod, season with salt and pepper, sprinkle with chopped parsley and water with hot broth. Cook for about 7 minutes until the cod is cooked. At Norma’s house, they prepare it in a clay pot and put it in the oven for the last baking.

Norma prefers fish dishes because she hasn’t eaten meat in years, although she admits that she makes an exception with Iberian ham.
